I love tacos. When a taco is done right it is one of my favorite foods of all time. But not all tacos are created equal and not all tacos are healthy. Below is one of the best and healthiest homemade tacos I have ever done.
First and most important part of the taco is the tortilla. This was the first time I have ever made homemade tortillas and they were amazing. I honestly don't know if I will ever buy pre-made again. You will need the following to make your own tortillas:
4 cups of all purpose flour
1 teaspoon of salt
2 teaspoons of baking powder
2 tablespoons of lard (see below)
1/2 cups of water
I used Epic brands Duck Fat in place of the lard. Mix the ingredients until you have one big ball of dough. Then make 24 smaller balls of dough for each of your tortillas.
Heat a skillet until it is nice and hot. Roll out your first tortilla ball, then place in the skillet. Cook on both sides until the tortilla is as crispy as you want it.
After you have the desired number of tortillas, its time to load them up and eat. In order to make this recipe as healthy as possible, I used on locally grown organic vegetables and meat. I are members of a meat CSA and also a vegetable CSA. We know who has grown the food and exactly how they grow it (avocado not locally grown but organic at Whole Foods)
For these tacos, I used local ground pork, organic sweet potatoes, cilantro, fresh green onions and avocado. Also added in a nice Alabama Beer to top off the meal. I might have to have tacos again tonight. I hope you enjoy!
